• 7–10 sea scallops
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• salt + pepper
• corn (thaw if frozen)
• 1 1/2 cups fresh corn kernels (2 cobs)
• 1 garlic clove, chopped
• 2 tbsp unsalted butter
• 1 tbsp olive oil
• 2 tbsp chopped fresh parsley

• zest of 1/3 lemon

• pat scallops dry with paper towels & season both sides w/ salt and pepper
• heat olive oil + butter in fry pan over med-high heat. when oil is hot & butter is foaming, place scallops in pan flat side down
• sear 2–3 mins until golden & crispy
• flip and cook another 1–2 minutes
• remove to rest on side
• in same pan, reduce to med and add olive oil, butter, garlic & cook til fragrant
• add corn, sauté 4 mins. add in lemon zest, juice, herbs + salt. stir
• plate! spoon butter corn mix onto plate or bowl, add scallops on top, and drip extra butter from pan over scallops.
